The Physics of Pull

A hookah is an air pump. You pull at the mouthpiece and a pressure drop moves backwards through the hose, past the purge valve, up the stem, and down into the water.

Short Downstems and Airy Draws

Downstems that are less than 1 inch submerged have a less resistive draw. The air path is less resistive, since less water needs to be displaced.

The result is that the smoke moves through the chamber faster, and fills the chamber quicker. However, there is a trade-off.

Short immersion results in less filtration. Less contact of smoke hitting the water. Smoke stays hotter and carries more particulates. This is especially problematic for lounge and hookah bar owners that want to provide smooth and cool smoking sessions, especially dark leaf tobacco.

I have seen owners implement short down stems thinking a looser draw would lead to improved sales. It does not. A smoker that smokes daily will be able to notice the difference between a smooth filtered hit and a harsh hit. However, they will not be able to explain or say that it is because of the down stem.

Long Down Stem and Restricted Pull

A long stem that is two inches or more submerged will make the draw much more difficult for the customer to pull.

This could be a good thing. Many of the premium German and narguile rusos come standard with a long down stem because these hookahs are designed to provide maximum filtration. The smoke that hits the water carries a lot of the heat and impure particulates. This results in a much cooler and smoother hit.

The problem with a hookah that has a long down stem is that the smoker’s lung capacity and the design of the hookah may not allow it to be used properly. A customer who is not experienced with smoking will find it difficult to smoke with a deep down stem and will often set the hose down after just two pulls.

With a commercial lounge, the target immersion is usually between 1.0 and 1.5 inches for downward stem length. This provides a smoother smoking experience and shorter immersion without the draw being extremely tough.

Diameter: The True Flow Regulator

Wide-Bore Downstems

A downstem with an internal diameter of 12mm or greater means a lot of airflow. Smoke moves fast. The chamber pressurizes rapidly. With minimal effort, the customer obtains dense clouds on the first pull.

Wide bore downstems are the standard for commercial lounges, and for a good reason. They accommodate a variety of lung capacities. They let uneven packing slide. They are durable for the quick rotation of twenty sessions per evening.

The trade-off is a loss of subtlety. Because a wide downstem controls the airflow, each pull of the downstem feels the same. This is perfectly fine for volume, but not for creating a luxury slow smoke experience with controlled resistance.

Narrow Downstems

A narrow downstem — 10mm or less — creates a tight, and focused draw. The customer must pull harder down the stem; this produces a different behavior in smoke and a slower charge. Smoke in this case is much more flavorful and has more cloud density down each pull.

A busy lounge will have staff packing bowls, and even minor issues with packing or minor clogs become bigger problems. Efficient use of narrow downstems will cause staff and customer issues at a busy lounge.

I tried a lounge with seven identical hookahs on the rail that had (bowls/HMDs/tobacco) that produced draws that were unlikely to be the same. Seven draws that were all different was caused by a batch of tubing downstems that were not identical (within 3mm) between the units. This was noticed by the customers and not by the staff.

Testing and Tuning in a Commercial Setting

What follows is my testing protocol that I suggest for any lounge owner looking to get the best performance from their downstem options.

First, fill the base with cold water. Always keep the water at the same temperature. The density of water at different temperatures affects draw resistance.

Next, use the same tobacco in the same bowl. Always use the same Heat Management Device (HMD). You are testing the downstem, not the pack.

Then, do a dry pull without a lit carbones para cachimba. Then do a pull with a lit coal. Over time, the resistance changes the elasticity of the tobacco and the bowl’s heated tobacco.

Finally, a standard pull fills the chamber. A faster fill means less resistance and less clearance (or more resistance and more filtration).

Once you establish your standard, have different staff members do the same test. Each person has a different pulling style. The downstem builds for your staff and customer base, but not just for you.

I have followed this protocol for over fifty lounge builds. When a guest complains about the draw, the problem has been solved with either the downstem immersion depth being changed by 0.25 inches, or with a downstem that is by 1 mm wider.

For lounges that need replacement parts, the most commonly stocked items are custom stainless steel tongs and ultra-thick, pre-punched aluminum foil. These do not impact draw, but the downstem geometry does.
