Do not move the uncut fruit. Fruit bowls mean less fruit in the basket; use it or lose it. When exposed to air, fruit cuts lose their moisture quickly.

Opt for pineapples with prominent crowns, with fruit that is firm and free of soft spots. A sweet smell is an indicator or ripeness. A session can last about an hour and would require a sufficiently large and wide pineapple.

You need these designated tools to turn everyday fruits into useful props: an 8-inch serrated chef knife (for grip when cutting the rind), a 1-inch melon baller (for scooping), a small paring knife (for making cuts and carving), a cutting board (to contain the mess), lint free kitchen towels (to clean), heavy duty aluminum foil (to cover), toothpicks (to secure the foil as a lid), and a sharpie (for marking out where to cup).

Step-by-Step: Carving a Watermelon Hookah Bowl

Step 1: Make sure to wash and dry the exterior thoroughly to avoid any dirt mixing in with your shisha

Step 2: Cut a level bottom to create a stable socles de narguilé.

Step 3: Use sharpie to make a marking of where to cut the top of the watermelon, about one third down from the top. Draw a circle to follow the line.

Step 4: Cut the lid with a cone cut. The slight inward angle allows the lid to fit on top without falling into the bowl.

Step 5: Use the melon baller to hollow out the bowl. Leaving an even thickness of one inch will prevent cracking and preserve maximum bowl volume.

Step 6: The surface of the bowl must be even. A flat bowl lets the bowl sit evenly.

Step by Step: Carving a Pineapple Hookah Bowl

Step 1: A clean pineapple is a happy pineapple. Wash the crown and skin, then dry.

Step 2: Cut the pineapple crown leaving one inch on top. This will be the lid. Keep cuts straight to avoid an angled lid.

Step 3: Over hollowing will cause the walls of the body to crack. Pineapple walls are thinner than watermelon. A wall thickness of three-quarters of an inch is ideal.

Step 4: Pineapples contain more moisture than watermelon. To help the moisture evaporate, place the pineapple upside down on a towel and let it drain for a few minutes.

Step 5: The stem hole on your crown lid goes in the center. Match your grommet size.

Step 6: Foil liner should go past the rim to seal against the lid.

Step 7: Toothpicks will go in at four positions around the circumference to pin the lid to the body.

Step 8: Pack lighter than a watermelon. Use less coals. Pineapple burns hotter.

Other Fruits That Work Well

Honeydew. Cut the top third off. Hollow the center. The thick rind holds up to the heat. Minimal flavor contribution. Best with mint or citrus shisha.

Cantaloupe. Same process as honeydew. Good with cream-based shisha like vanilla custard.

Pomegranate. Cut the top quarter off. Use the rind hull. Short session — 20 to 30 minutes, but price as a single-bowl experience.

Coconut. Saw off the top. Drain water. Scoop the meat. Nearly indestructible under heat. Neutral flavor. Good for tropical tobacco blends.

Drying the Interior and Foil Lining

This step differentiates great versus average fruit bowls. A wet cavity will ruin the session.

When the fruit juice mixes with shisha, the tobacco gets soggy. Weak clouds, and flavor turns muddy.

After hollowing, spend two minutes drying with multiple towels. Press against the walls, and replace as they saturate.

Air dry, upside down on a clean towel for 3-5 minutes. Gravity will help remove some of the residual moisture.

A couple of considerations for foiling your shisha bowl are the lining’s heat retention capabilities as well as the lining’s absorption barrier. The foil lining keeps shisha from absorbing too juice and reflects heat back into the bowl, making the coal burn more efficiently.

Use heavy-duty foil and press all the sheets creases to fit the shape of the cavity. Air pockets should be as minimal as possible, so be sure to smooth them all. Pineapples and honeydews require a double layering of foil.

It’s critical to remember not to over pack and make sure to leave a gap from the shisha to the foil lining. This gap is typically a quarter of an inch. Without this gap the tobacco will scorch against the foil and create nasty smoke.

Fruit bowls have a much more restricted airflow than ceramic bowls, so make sure to fill shisha in loosly.

Watermelon should hold 45 to 55 grams with an expected smoke time of 60 to 90 minutes, with pineapple taking 20 to 30 grams for a session of only 45 to 60 minutes, and honeydew and cantaloupe taking 25 to 35 grams with sessions that should last 60 minutes. After one usage make sure to change the fruit bowl as warm fruits that are more fibrous to pack will begin to break down quickly.

The insulation of many fruits is why you’ll need to use more coal for larger fruits, with shisha needing three pieces of coal for watermelon, 2 pieces for pineapple, and only a single piece for small fruits like apple or pomegranate.

Don’t put the coals in the center. Position them around the edges. The deepest point in the bowl is the center. It is the hardest point for the coal to heat. The center is the hardest area to heat, because heat travels to the sides first. Putting coals along the perimeter will heat the sides and center of the bowl.

Every 10 to 15 minutes, rotate the coals. The thickness of the rinds on the fruit bowls vary, causing the bowl to burn at uneven levels. Rotating the perimeter coals will fix this adding to the smoke flavor and eliminating hot spots.

Watch for coal blackout. If you see bubbling around coals, it is best to place them in another position once they have blackened.
